Carrot-orange ginger cocktail

AKA the “Orange you glad it’s Friday” drink.

Ever since we were in Mexico, I’ve been craving fresh flavors. I had the best carrot juice there one morning for breakfast that inspired this fun and colorful concoction.

Carrot juice is actually a bit sweet when fresh. And the color is amazing. This won’t be for everyone, but I wanted to experiment with it and here we are. It’s a bit like a screwdriver but the carrot cuts the sweetness so play around with it. Maybe the only cocktail that feels a bit healthy - you’re welcome.

Get juicy with it!

You’ll need:

  • Juice of one orange (I used Cara Cara for its sweetness and color)

  • Juice of half a lime

  • Simple syrup to taste

  • Small round of ginger, peeled

  • ~2 oz. vodka of choice (we heart Tito’s)

  • Ice

Muddle the ginger in a cocktail shaker. Add ice and remaining ingredients. Shake and serve over ice. Garnish with citrus slices, mint, or carrot greens. For a mocktail, add more orange juice and top with soda water.
